Over the past four decades, Paisano Sausage Company has been supplying traditional Italian sausage and meatballs to some of the most delicious restaurants in the Denver area. Making the finest Italian sausage and meatballs is what we do. We keep it simple. We strive for consistency. And we're passionate about making the best Italian sausage in Denver for you and your family. Chances are, you remember dinner at your grandma's because the family was together. But like every great cook, your grandma puts a little something extra in her recipe that no one knows about. A pinch of some secret ingredient made it taste just a bit better than everyone else's. That’s the authentic, home-cooked flavor infused into every one of our delectable sausages.
Our personal favorite is sliced thin with a dab of mustard while watching a game on the big screen. Our dry sausage is a high-protein, no-fuss snack. Because it is cured meat, it never needs refrigeration and can be carried anywhere.

Artisan dry sausage made by hand with love
Many cultures have perfected different ways of curing or preserving meat, either through drying or smoking. Our dry sausage comes from an Italian tradition of curing pork using only salt and air. Many commercial sausage makers cook their product. Artisan producers will tell you that cooking changes the flavor. The common factor is that meat is ground and a casing is used. In Central European countries such as Germany, Hungary, and Poland, smoke is used to cure the meat.
We use salt and air to dry our sausage. The result is an artisan sausage with a deep, complex flavor that requires no refrigeration and has a practically unlimited shelf life. Our dry-cured sausage is a high-protein, no-fuss snack. Because it is cured meat, it never needs refrigeration and can be carried anywhere, which is perfect for:
hunters, hikers, golfers, bikers and fishermen.
The Paisano Sausage Company was started 43 years ago by two good friends (Paisanos). John Laurienti and Jim LaBate started making sausage for the restaurants and pizzerias in Denver. Due to Jim's health issues, John bought out his interest. I, Katherine Laurienti, came on board in 1981. I started as a part-time salesperson but soon moved into production.
Eventually, John and I married, and he let me take over the running of the company. As more chain restaurants started moving into Denver, our customer base of small, family-owned businesses kept shrinking. We struggled to find ways to keep busy. Just as I was perfecting the dry sausage and getting ready to market it, John passed away. Although it is his original recipe, John never knew about Paisano Sausage.
Soon after John's passing, I won a contest with Deluxe Corp. The winner would get $15,000 to spend on marketing and the help of a "marketing mentor" for one year. It was with their help and advice that I launched Paisano Sausage. We decided on the name Paisano Sausage for many reasons. I remembered the stories from the Italian families growing up in North Denver of sausages hanging in their attics or basements.
Every family had their own special recipe, and it was always made around Christmas when the temperature cooled down. Although I started with the traditional Italian recipe, I continue to add new varieties that interest me. Each flavor has its own story that you can read about on the labels.
After almost 35 years in the business, I still start work at 5:30 every morning, and I am still passionate about making the best sausage.

Very little has changed in the way we make our dry sausage. We work in small quantities to ensure quality and give each batch the attention it deserves. We started making dry sausage because we wanted to remember how great those times were, with family and friends gathered to celebrate. Things were simpler then. Paisano's Italian Sausage
Our recipe hasn't changed since 1973. We grind pork and fresh herbs and spices. We make it two ways: link or rope. We use an all-natural hog casing to make our sausage. Our favorite way to serve it is baked, with pasta and marinara.
Bulk
Some of the sausage we leave is in loose form. It's best used in lasagna, to make meatballs, and, of course, in pie at Easter. A few years ago, some of our customers let us know that it was great to grill. Better than any hamburger! So during the summer months, we have them ready to go into patties for your cookout.
Paisano's Meatballs
We use beef and pork, along with herbs and spices and Romano cheese, to make our meatballs. They're handmade, rolled into 1-ounce or 2-ounce meatballs. They're pre-cooked, too. And the best part is that we quality control every batch!

The sauces we sell are sourced from a local artisan sauce manufacturer, and our relationship goes back a very long way. We can honestly say these meticulously prepared sauces are among the finest we've tasted and are a perfect complement to our tasty pastas and meats. We make it like your great-grandma would've made it if she had a state-of-the-art industrial sausage stuffer. But you get what we're driving at: Our sausage recipe hasn't changed since we started in business. It's made fresh to order every day; we don't cut corners, and we don't use preservatives. We use high-quality ingredients, and as much as we can, we keep it local.
We've used the same pork supplier for over 20 years. We are sticklers for quality. Because we are a small company, we maintain consistency and quality in our products. We're hands-on, too; machines can't make meatballs, at least not correctly. The texture isn't right. We don't mess with the recipe for our Italian sausage. It hasn't changed since we started making it in 1973. It was, quite simply, perfect.

Boar's Head Top Round Pastrami is bursting with classic New York deli flavor. We slice it thin and pile it on a French baguette, with lettuce, tomato, provolone and mustard for a hearty favorite.
